

Today we’d like to introduce you to Kyle St. Clair.
Kyle, can you briefly walk us through your story – how you started and how you got to where you are today.
One90 is an East Dallas born establishment owned by multi-generational East Dallasites Kyle St. Clair and Herman Guerra. Kyle spent years pursuing higher education, and after obtaining his J.D./M.B.A., spent a few years practice law for the federal courts and the Texas university system. After graduating from U.T., Herman also pursued a career in the public sector, working for agencies such as Child Protective Services and Dallas County Probation. After years of education and public employment, the entrepreneurial bug bit hard, and we quit our careers in Law and Law Enforcement, respectively, with one objective in mind: to make high quality, craft BBQ more accessible. We provide a retail BBQ product that, when heated in the cryo-vac’ed packaging, is moist and tastes as if it was just removed from the backyard smoker without waiting in long lines at popular BBQ restaurants or at the house babysitting the smoker. Because our meats are good for at least 30 days after packaging, customers can stock up on meats and enjoy moist brisket, pork, chicken, sausages, etc. at a moments notice. In the process of developing the retail product, we expanded our business to include a food service and catering. In addition to providing our packaged products, we now use our in-house smoked meats and cheeses to make a variety of sandwiches, plates, tacos, salads, and sides. Our goal is to be the “go-to” place for someone looking for minimally-processed smoked meats in east Dallas, whether it be on a hot sandwich, plate or taco served to-go, or packaged for use as a dinner ingredient at home.
Has it been a smooth road?
No, we have experienced growing pains. We have grown this business from a back-yard hobby to what it is today. When we first opened the doors, we didn’t know what would happen. I remember the Health Inspector (the last city official to visit and give you the OK to open up) saying that we could officially open. So, we unlocked the front door, and stuck a homemade “BBQ —>” sign by the road (which we later learned ran afoul of city sign-permit regulations). We didn’t have plates, forks, containers, much less a menu. We had three sandwiches written on a chalk board that we made, which was done in response to our first customer asking what we were selling. To our surprise, people showed up on day one, and then, through word of mouth, we had people from the local neighborhoods checking us out. Although we have had our fair share of setbacks, we are very fortunate to have a supportive local community, whose loyalty permitted us time to work out the kinks. We’d love to hear more about your business.
I created the menu and smoke the meats, with the help of some great cooks. Herman manages the current location and manages community engagement. We pride ourselves in providing a wide variety of minimally-processed smoked meats to our local community. We have catered to 500+ parties in both private and corporate settings, participated in big events such as Savor Dallas, Smoked, and Taste of Dallas. We enjoy supporting local community schools and organizations when we can. Just recently, we assisted the Dallas Police Department in smoking 20 briskets to raise funds for fallen and injured police officers. We are unique in our product offering. While we are most known for our consistently moist, tender, pecan/oak smoked brisket, we also have other meats like our in-house smoked salmon, duck, beef tenderloin, bacon, house-made sausage, pork belly, and pastrami, to name a few. In fact, I believe it was our d.l.t. (smoked duck, lettuce, and tomato) that was the most influential factor in Guy Fieri’s decision to feature our place on this season of Food Network’s Diners, Drive-Ins, and Dives (“Triple D” is much easier to say BTW). The episode “Bird and Beef” was first aired on February 2, 2018. He tried the d.l.t. and the Spicy Brisket Sandwich (piled sliced brisket topped with roasted peppers and smoked cheddar cheese), you’ll have to watch the show to get his opinion. In addition to traditional bbq sandwiches, we created some really tasty sandwiches using our in-house smoked ham (ham & swiss), pastrami (reuben), duck (d.l.t.), pork belly (pork belly bahn-mi) and new york strip (philly cheese steak). Lastly, I would mention that we provide large portions too, such as whole hams, briskets, tenderloins, prime ribs, turkeys, etc., and will vacuum seal the meat if you wish to enjoy it at a future time. We are happy to help customers get the smoked meats they need to host any function.
Is our city a good place to do what you do?
I think Dallas, especially East Dallas, is a great place for this type of business. And, by “type” I mean locally grown business focusing on a high quality and unique product or experiences.
