Meet Lee Edwards of Pop’s Burger Stand in Waxahachie

Today we’d like to introduce you to Lee Edwards.

So, before we jump into specific questions about the business, why don’t you give us some details about you and your story.
Pop’s Burger Stand originated out of my/our garage man cave in May of 2014. My son’s Mason Matt & Ben envisioned a no frills (Pop’s calls it neon & fluff) old-school burger stand using only the best quality ingredients possible. PBS use’s always fresh never frozen 100% Angus beef. We hand press our own patties, the Low & Slow and the El Camino are two of our most popular burgers. Our fries are hand cut & twice fried to crispness! Same for our world-famous onion rings seasoned then dredged, hand cut thin so they cook up crunchy & crispy!

Oh yeh! Almost forgot Pop’s World Famous Root Beer served up in a frosted mug!

Pop’s Burger Stand IS a burger destination. We have first time guests & customers that drive from all over North Texas to try our burgers! We are told on a daily basis hey Pop’s “best burger I have ever eaten” we have been very fortunate in that everyone loves our burgers! The Texas Bucket List ran a story on their tv show.

Great, so let’s dig a little deeper into the story – has it been an easy path overall and if not, what were the challenges you’ve had to overcome?
Anyone that say’s opening a restaurant is not a challenge has obviously not opened a restaurant. Everything has to come together all at once. Location vendors staffing financial concerns are just some of the hurdles in opening a restaurant!

Please tell us about Pops Burger Stand.
Owner Pop’s/Lee Edwards set things in motion! His son’s Mason Matt & Ben did the hard work and today Matt & Ben are responsible for the day to day operations.

Pop’s doesn’t actually “work” he is best known for “working the floor” that’s mingling with customers and the kids! Pop’s loves the kids!

Proud of my son’s! There hard work & dedication is inspiring to me! We are Proud of our customers!

What sets PBS apart from all other burger stands is our attention to detail. That we genuinely care about the product we serve to each & every customer. If there is an issue we stand to make it right for the customer. Besides what other burger stand has a mascot (house cat) named “French Fry”.

Do you look back particularly fondly on any memories from childhood?
Piling in my Dad/Pop’s’ station wagon driving to Prairie Dog in Grand Prairie, TX & buying 10 burgers for a dollar. Yes 10 for a $1.00 I’m that old!

    We eat there on a regular basis. We love the turkey burger, chicken strips and root beer floats!! We started going there when he was in Ennis. May through Oct they have cruises in. It’s lots of fun with all the rat rods and classc cars! Pop is a car guy and when you walk in you will see it!!! It’s our favorite burger place!!
