Today we’d like to introduce you to Luis Villalva.
Luis, let’s start with your story. We’d love to hear how you got started and how the journey has been so far.
I have about 20 years in the industry star as a busboy whit a background of Taquero in my hometown Estado de Mexico. We came from a taqueros family by my father’s side. Most of my father’s uncles, cousins few brothers are taqueros or have work with the family in the industry of the tacos. In personal, my father and my mother are my main mentors besides, I have learn from a couple of my uncles in early 10’s. Also, I have managed a few restaurants in the DFW area.
Has it been a smooth road?
Smooth yes, but a lot of struggles on the road we are a family business which it makes a little difficult like now we are all in the same place everyday home, car, work, etc. that make a little to much some times.
So, as you know, we’re impressed with El Come Taco and La Viuda Negra – tell our readers more, for example what you’re most proud of as a company and what sets you apart from others.
We are a family own and operate restaurant and bar we specialize on tacos Mexico City-style (street tacos) and Mexican spirits our bar is a very well known for having a great selection of Mexican spits (mezcal, sotol, bacanora, tequila, ron, gin, etc.) also our drinks are made a seasonal flavor on the taco side I will say al pastor tacos and Cecina are our most popular follow by pollo Mexican, or Jose’s taco (bean and cheese taco) we used all the recipes we use are family recipes will no sell nothing we do not also eat the salsas are made everyday whit a fresh produce from scratch like every single thing we used in the house (seasoners).
Let’s touch on your thoughts about our city – what do you like the most and least?
I like the diversity of the city is very welcoming to everyone there is no much I can complain about it.
