

Today we’d like to introduce you to Natalie Brown.
Natalie, can you briefly walk us through your story – how you started and how you got to where you are today.
We started as a boutique catering business called TCB Catering in 2004. We maintained the business until 2016 and then Todd and I decided we needed to step it up a notch (after having our son) and open a storefront that offers easy and healthy gourmet on the go as well as offer a dine in concept offering unique and delicious sandwiches and salads. We take food seriously but not ourselves! We like to be silly and have fun with our customers. Life’s too short to be so serious!
We’re always bombarded by how great it is to pursue your passion, etc – but we’ve spoken with enough people to know that it’s not always easy. Overall, would you say things have been easy for you?
We have our fair share of rough vs. smooth roads for sure. But that’s what makes us improve as a business! It’s all about consistency and communication.
So let’s switch gears a bit and go into the Lettuce Cook story. Tell us more about the business.
Our concept is simple…..just eat real food. We feel like there are so many fad diets out there and we just try to keep things simple by using organic when available, good sourced meats, etc…We have options for everyone (vegan, vegetarian, pescatarian, low sodium, gluten free)…..you can come in and be good and grab a super kale salad with pomegranate, coconut, blueberry, super seeds and cherry balsamic or you can be bad and grab a cheesy chicken spaghetti from our case. I feel like the food diversity sets us apart. Our grab n go cases offer wild caught salmon meals, steak meals, chicken options, duck, vegan, casseroles, soups, sides, kids meals, and so much more. We are always switching it up so you don’t get bored! We like to tell people that we have no rules! We also still do catering, we are all over the map and wouldn’t have it any other way.
Has luck played a meaningful role in your life and business?
Our son is our luck. He is the reason we work so hard and continue to stay lucky. He is our daily motivation! He is the reason we started Lettuce Cook. Everything we do is for Wells.
Oh-and our monkeys! We have a fabulous monkey mural that was painted by Jimmy Jenkins! People LOVE our monkeys!
