

Today we’d like to introduce you to Robert Sansone.
Thanks for sharing your story with us Robert. So, let’s start at the beginning and we can move on from there.
I have been a chef for 35 years. I always wanted to own a successful restaurant. After working in the corporate world for the past 2o years I decided it was time. We tested the concept for over a year in different venues and after playing around with different flavors and combinations we feel we have created the best and most interesting menu in the market, our customers tend to agree as we have been very successful for a tiny operation. We are looking at expansion at this point and have signed contracts with some very promising venues that will help facilitate the growth. This is a family run business with my wife Amy acting as general manager and my sons working in the operation when they are available. One is in college at Texas Tech and the other is in high school in Gunter where we call home. We are also blessed to have a key partner in our assistant manager/kitchen manager Keith. as well as an awesome team and friends who are willing to help when we have a need.
Great, so let’s dig a little deeper into the story – has it been an easy path overall and if not, what were the challenges you’ve had to overcome?
Not at all, we have had multiple and ongoing challenges with our facility and the new ownership of the building. The area where we are located is very difficult to find good staff and the pay is much higher than other areas of the metroplex. We have invested our life savings and countless unpaid hours over the last 3 years, we still do not take any pay from the business but the dynamics are changing with the new contracts and the future looks very bright. We have also considered looking for an investor to help with expansion as obtaining loans from financial institutions is almost impossible when you are starting out.
Please tell us about Cheezies Gourmet Grilled Cheese.
We are a quick service restaurant specializing in gourmet grilled cheese sandwiches. We make everything possible in-house including smoking our meats and making our cookies from only real butter and all of our products from fresh ingredients, we source locally whenever possible and our bread is baked locally and delivered fresh daily. We are building a brand that is synonymous with excellence, not trying to squeeze every possible dime at the cost of quality.
Do you look back particularly fondly on any memories from childhood?
Too many to mention. I had a great childhood. My mom raised us for the most part and her love for us was always demonstrated even while she was sacrificing unbeknownst to us.
