Today we’d like to introduce you to Rosa Arellano.
Hi Rosa, so excited to have you with us today. What can you tell us about your story?
The food industry has been a part of my life for as long as I can remember. I spent more than 18 years working for different restaurant companies before I finally decided to take a leap of faith
and start something of my own. I began at the very bottom, working hard and learning everything I could. Within 10 months, I was trusted to run my own location as General Manager.
My mission has always been to make sure every single guest whether a teacher, doctor, plumber, or retiree walks away feeling valued and cared for. That passion for hospitality guided me for many years.
Two major events changed the course of my life and career. In 2017, I lost my father unexpectedly at just 54 years old. That loss shook me to my core. As the oldest daughter, I had to stay strong for my mother, my siblings, and my three children all while managing over 100 staff members at work. It was one of the hardest times in my life, but my family, including my grandmother and two uncles, held me up. They’ve been my pillars ever since.
Then came COVID. Like many in the restaurant industry, I faced the uncertainty of those times head-on. My focus shifted from guests to my employees, making sure everyone felt safe and supported. That season taught me how powerful community and teamwork can be. It also made me realize that I was ready to take on something of my own to build something meaningful for my little family.
In 2022, I opened my first restaurant through a partnership. It was a wonderful learning experience, but it also came with challenges that eventually led me to walk away. It was heartbreaking, I lost everything I had worked so hard for but I never lost my faith. I trusted that God had a bigger plan for me.
After some time of rebuilding, I nearly gave up. Finding the right building was impossible, and even a food truck opportunity slipped through my fingers. Then, right after starting a new job with a large restaurant chain, I got the call from my realtor: “You got the building you’ve been calling about for a year.” It felt like a divine sign. Everything started falling into place, and that’s how Rosas Mexican Cocina was born through faith, perseverance, and the unwavering support of my family.
We all face challenges, but looking back would you describe it as a relatively smooth road?
Not at all but it’s been worth every challenge. My family and I worked side by side to clean, remodel, and bring this place to life. From painting walls to managing operations, everyone had a
hand in it. Opening my first restaurant and walking away from it was tough, but it gave me the strength to do this one right. My family jokes that I’m good at opening restaurants, maybe that’s my
hidden talent! Every challenge has been a lesson, and every lesson has led me closer to where I am now.

Rosas Mexican Cocina is a full-service restaurant and bar that celebrates authentic Mexican flavors, family traditions, and community. We’re currently expanding with a beautiful outdoor
dining patio, and we specialize in catering from small private dinners to large scale events. We also love hosting bar and community events, private parties, and special celebrations. Our
goal is to make dining fun, interactive, and full of warmth. What really makes Rosa’s special is the people behind it. I’m incredibly proud that 80% of our team are women, many of them are students or working second jobs. They’re hardworking, funny, and supportive of each other. My mission has always been to create a workplace where my team feels valued and truly enjoys being part of something special. When they’re happy, our guests feel it too.

If you had to, what characteristic of yours would you give the most credit to?
Without question, my family. They are my foundation, my “village,” and the reason Rosa’s exists. Rosa’s Mexican Cocina is a full scratch kitchen, meaning every dish is made with love, care, and authentic recipes passed down through generations. My husband and I put our hearts into perfecting the flavors and details. My daughter, Jaquilyn, created one of the best tequila libraries in town. My son and uncles helped with the renovation, working tirelessly to bring my vision to
life. And then there’s my youngest daughter, Hilary she’s been part of the restaurant world since she was a toddler. She proudly says she’s the reason Rosas is what it is, and honestly, our guests agree! She’s grown up here, and everyone loves her energy. When guests tell me, “It feels like we’re in Dallas when we come here,” it makes me so proud. That’s exactly the atmosphere we wanted a local spot that feels elevated but still like home. We also give back as much as we can, offering discounts to first responders, sponsoring youth
activities, and supporting organizations throughout the DFW area. Our customers are like family to us, and we’re grateful for every one of them.
