Meet Scott Piland of Unleavened Fresh Kitchen

Today we’d like to introduce you to Scott Piland.

Scott, let’s start with your story. We’d love to hear how you got started and how the journey has been so far.
Unleavened Fresh Kitchen was born from a friendship and a desire to bring fresh, wholesome food to the community we love. We began Stock in Trade Restaurant Group in 2015, and launched our first concept, Unleavened Fresh Kitchen, that same year. We focus on developing brands and introducing relevant and exciting ideas into the fine casual dining market.

As entrepreneurs, and longtime friends, we started our journey by taking the emerging trends we experienced while traveling in other markets and identifying what was missing back home. As a Dallasite, if you wanted something fresh, healthy, filling, and quick, you’d have to compromise taste. We thought that was a shame. If you wanted something tasty, you’d likely have to deal with your conscience later on. That doesn’t feel good. That’s why we created Unleavened Fresh Kitchen, an approachable fast causal restaurant serving up fresh takes on classic favorites. We’ve quickly become the favorite spot for the health conscious or those looking for something that they can feel good about eating. Our first location opened in September of 2015. It has quickly evolved into a recognized leader in the Dallas food scene. That makes us feel pretty good.

We’re always bombarded by how great it is to pursue your passion, etc – but we’ve spoken with enough people to know that it’s not always easy. Overall, would you say things have been easy for you?
Smooth might be a bit ambitious, but we have had a great deal of fun taking on new challenges we face. We have had phenomenal support from our community, friends, family, and customers. This support continues to fuel us in our growth and continued focus on making the road smoother all the time.

So let’s switch gears a bit and go into the Unleavened Fresh Kitchen story. Tell us more about the business.
Unleavened Fresh Kitchen is a refined, fast casual restaurant serving convenient meals that everyone can feel good about eating. The restaurant is open for breakfast, lunch, and dinner seven days a week, and offers dishes that are made from scratch, in house, daily. The lunch and dinner menu feature an assortment of wraps and salads, as well as dips, complements (sides) and sweets, while the breakfast menu focuses on wraps and hashes as well as unique a la carte options. A strong seasonal component, with rotating House Guests items, keeps the menu current, creative, and fresh.

Engaging customer service is a non-negotiable detail at Unleavened. This is our greatest opportunity for separation in a competitive restaurant landscape. It’s why we hire for attitude and then train our team to be well-versed in current trends and classic culinary techniques.
