Meet Ted, Colby and Judy Bilsky of Scratch Catering & Fine Foods in Southlake

Today we’d like to introduce you to Ted, Colby and Judy Bilsky.

So, before we jump into specific questions about the business, why don’t you give us some details about you and your story.
We have always been a family of cooks – all self-taught. Over the years, our family was always being asked to “help cook” for friend’s & family’s parties and events. When our son, Colby, was preparing to graduate from Texas A&M University and just completing a corporate internship, he revealed to us that he could not see himself working in a cubicle 8 hour a day. As life-long self-employed entrepreneurs, we certainly understood his dilemma.

Colby brought the idea of opening a catering business to expand upon our family’s love of cooking. The initial idea was for us to help him get it started and then we would resume our respective endeavors. After spending the first six months working this business, it became obvious that the catering business was our destiny and we quickly fell in love with our new found passion.

Overall, has it been relatively smooth? If not, what were some of the struggles along the way?
Launching a new business is always challenging, but add in the idiosyncrasy of working with your wife and son, and the start-up takes on a unique aspect. Having to work with each other 10-12 hours a day, then go home together and leave the business issues at the shop was always a work in progress.

Our initial location was in strip center with a Neighborhood Walmart and provided the walk-in clientele that would launch our daily take-out service. Six months into our launch, Walmart announced the corporate closing of this store, and along with the closing, our foot traffic quickly dissipated.

Scratch Catering & Fine Foods – what should we know? What do you guys do best? What sets you apart from the competition?
We are a family owned and operated catering company that specializes in all things made from scratch! We offer a complete range of cuisines from heavy appetizers to fully plated, sit down dinners.

One of the many things we are very proud of is we are beginning our third year and have already acquired one other catering company (Boulevard Eatz, Colleyville) and launched our second location on downtown Fort Worth.

A key differentiator for Scratch is that when a customer calls into the store for a catering inquiry, they will speak to an owner. While we continue to grow, we want our clients to have the feeling they are receiving a VIP level of service.

What is “success” or “successful” for you?
While it is easy to say as a business you are successful when you are making money, for us, success is defined as to what we can give back to our community. We have so well embraced by the area businesses, municipalities and citizens, it is important to our family that we can be counted on when a time of need arises.
