Rising Stars: Meet Joe Campos of Hilltop Food Truck Park

Today we’d like to introduce you to Joe Campos.

Hi Joe, can you start by introducing yourself? We’d love to learn more about how you got to where you are today?
The menu at Gogi Time Korean BBQ is inspired by the flavors of Korea and the Flavor Creator Jae Sook Beaty (Mom) who handed down these family recipes. The menu features everything from our popular appetizer Mandu (Won Tons) to our hearty bowls. Whether you’re looking for something on the spicy side or sweet, savory and delicious, there’s something for everyone on the menu.

I’m sure it wasn’t obstacle-free, but would you say the journey has been fairly smooth so far?
We have worked through challenges such as Brand, introducing Korean inspired food; weather, as we work out of a food trailer; and location, Hilltop was once a dirt lot with a few tables that had umbrellas.

Appreciate you sharing that. What else should we know about what you do?
We provide Korean BBQ inspired and taught by my mother, Jae Sook Beaty. She has passed and left us a legacy to share. We are known for our Bulgogi, thinly sliced ribeye, marinade made from scratch and grilled on a flat top grill. Our food truck is family owned and operated. We set ourselves apart as we believe the dining experience and friendly introduction of Korean food is important. It’s where my wife and her family keep their mothers memory living through them.
