Rising Stars: Meet Kristin Lawson

Today we’d like to introduce you to Kristin Lawson.  

Hi Kristin, so excited to have you with us today. What can you tell us about your story?
I’m originally born & raised in Louisiana & I met my husband in Jamaica 6yrs ago & he relocated to the U.S. after we married. We moved around several states due to me being military & working for the government before we found our permanent home here in North Dallas. After having our daughter during the pandemic, we decided to start our food trailer business because my husband’s dream was cooking. We purchased our custom-built trailer in October of 2021 & named it K&J’s Caribbean Bayou. Our business name incorporates our children’s first name initials & captures both my husband’s & I home town culture (Caribbean Bayou). We will be permanently located on Saturdays at the Hilltop Storage on Hwy 380 in McKinney, TX starting mid-August 2022. I’m sure you wouldn’t say it’s been obstacle free, but so far would you say the journey has been a fairly smooth road?
It has not been a smooth road at all. When we first started it was difficult to understand the Food Safety rules & requirements for mobile food trailers. It’s still very difficult because every county has a different set of rules that never seem to align to obtain Food, Fire, & Septic permits. You find yourself constantly making adjustments to your food trailer to meet everyone’s requirements when the counties are both next to each other or one street over from each other. 

As you know, we’re big fans of you and your work. For our readers who might not be as familiar what can you tell them about what you do?
I’m currently a Human Resources Specialist for the Department of Justice during the week & I’m a Disabled Veteran who served in the Air Force. My husband is a Pest Control Specialist for Rentokil. We mainly work our food trailer on the weekends & for events. We are proud that we’ve been able to start our own business for our family & for our children. We feel that we bring a true Caribbean taste to our food. My husband cooks authentically each time to give the customers a true taste of the Caribbean.
