My journey into the world of barbecue started quite unexpectedly, on our first Thanksgiving in a new home. With the excitement and promise of our new beginning, I took it upon myself to make a memorable feast for my family. I decided to smoke my very first brisket, not knowing that this humble endeavor would ignite a passionate love affair with barbecue that continues to grow. To my delight—and relief—my family loved it! Their exuberant reactions sparked something deep within me, and from that day onward, I was hooked.
What began as backyard experiments quickly evolved into a defining passion for me, one that I nurture and hone each day, fueled by the cherished memories of my grandfather, R.C. Myles. He was my greatest supporter, the person who always believed in my potential, and my guiding light in the world of barbecue. We would talk about BBQ every single day, sharing tips, techniques, and our dreams for the perfect smoke. Even after his passing in 2024, his spirit continues to inspire me.
In honor of his legacy, we created our signature sauce, affectionately named “41”—a number significant in our family history. Skatts BBQ has grown through the unwavering support of our community—one plate at a time. It’s a testament to the bonds that barbecue can forge, as families gather around the table to share meals and make memories. This is what BBQ means to me: it’s a communal experience, a way to connect with others, and a means to celebrate life’s moments—big and small.
Every day, I strive to deliver more than just a meal. I aim to create a space where people can come together, share laughter, reminisce, and enjoy the smoky embrace of good food. At Skatts BBQ, we’re not just serving a plate of food; we’re serving history, love, and a slice of my heart. From those early days of backyard grilling to now running a beloved BBQ haven, I’ve learned that every rib, every pulled pork sandwich, and every smoked brisket is infused with purpose and passion. This is more than a business for me; it’s a legacy for my family and a celebration of the spirit of BBQ—a beautiful melding of flavors, families, and memories.
Alright, so let’s dig a little deeper into the story – has it been an easy path overall and if not, what were the challenges you’ve had to overcome?
Skatts BBQ has never been just about food — it’s been about family, faith, and perseverance. The journey hasn’t been easy. In 2024, the passing of my grandfather left a mark not only on our family, but on the business he inspired. At the same time, I was balancing the grind of working full time while chasing the dream of building Skatts into something lasting.
Catering became the bridge — a way to put our flavors in front of more people. But it often meant long nights spent tending smokers and preparing orders, only to turn around and clock in for a full shift at my day job. The smoke and the grind became inseparable, each feeding the other.
Now, as our clientele grows, so does the vision. The next step is bold: transforming Skatts BBQ from a traveling, event-driven business into a true brick-and-mortar destination. The hurdle is funding, but the hope is strong. Every plate served, every event booked, and every customer who comes back brings us one step closer to opening the doors of a place we can finally call home.
Alright, so let’s switch gears a bit and talk business. What should we know about your work?
For nearly 15 years, I’ve dedicated my career to nursing, walking alongside patients and families through some of life’s most difficult and rewarding moments. Today, I serve as a healthcare executive, helping to shape the systems that care for our communities. It’s work I value deeply, rooted in service and commitment.
But when the scrubs come off and the meetings end, my heart belongs to the smoker. Skatts BBQ was born out of that passion — a love for slow-cooked meats, bold Southern flavors, and the joy of gathering people around good food. What started as small catering jobs has grown into a vision: to see Skatts BBQ become the go-to, premiere barbecue restaurant in the region.
For me, it isn’t just about brisket, ribs, or pulled pork. It’s about building community, honoring family traditions, and creating a space where people feel welcome. Healthcare taught me compassion, resilience, and discipline — lessons I now carry into the kitchen. With every plate we serve, we’re working toward our dream: bringing Skatts BBQ from the backyard to a brick-and-mortar home the whole community can be proud of.
