Lauren Talbot Gillan shared their story and experiences with us recently and you can find our conversation below.

Good morning Lauren Talbot, we’re so happy to have you here with us and we’d love to explore your story and how you think about life and legacy and so much more. So let’s start with a question we often ask: Have any recent moments made you laugh or feel proud?
I recently launched an online nutrition course—something I brought to life largely on my own (with the help of a great videographer, of course). I wrote the scripts, hired a team to film and produce it, and personally designed every piece of content and resource that goes along with it. Parts of the process were fun and creative, while others were incredibly time-consuming and, at times, downright frustrating.
After six months of chipping away at it in my spare time, hitting “publish” felt like such a release. I’m genuinely proud to have created something useful—something I can now share with others to support their health in a meaningful way.

Can you briefly introduce yourself and share what makes you or your brand unique?
Hi! I’m Lauren (Talbot) Gillan—a Certified Holistic Nutritionist with over 15 years of experience helping people feel better in their bodies by getting to the root of what’s really going on: from stubborn fatigue and hormone imbalances to digestive drama and icky inflammation.

Somewhere along the way, mainstream wellness messaging made us feel like we have to choose between being hot or being healthy. I don’t buy it. I believe your body is designed to thrive—and when it’s properly nourished, you don’t just look radiant, you feel unstoppable.

I recently launched an online nutrition course that’s as practical as it is powerful. It’s a no-fluff, real-food guide to building a solid foundation for your health—whether you’re brand new to holistic wellness or just craving a refresh that makes sense in real life (not just on Instagram).

Okay, so here’s a deep one: What was your earliest memory of feeling powerful?
As a child, I was incredibly shy– quiet and observant.

To help, my mom enrolled me in a small weekend acting group. I absolutely loved it.
When I was on stage, I literally became a new person. I thrived under the spotlight.

In fifth grade, one of my favorite teachers caught wind that I could sing and had recently performed the song “You can’t get a man with a gun” from Annie Get Your Gun in my acting troupe. Apparently, she thought it tied in perfectly with the theme of the school play and I was asked to privately audition in the hallway one afternoon. She gave me a thumbs up… and that was that.

I remember the moment when I belted out that song and jaws dropped all around me. I am pretty sure both my fellow students and their parents were shocked that I could speak, let alone sing.

That moment? It made me feel unstoppable. I still smile when I think about it.

If you could say one kind thing to your younger self, what would it be?
Believe in your magic. Believe that you can… and you will.

Next, maybe we can discuss some of your foundational philosophies and views? What’s a belief you used to hold tightly but now think was naive or wrong?
I used to believe “kale” was king and that a “plant-based” diet was superior to other ways of eating.

To my credit, this was long before “plant-based” meant anything other than just eating actual fruits and vegetables.

From the beginning of my career as a Nutritionist, I have always promoted a real food, vibrant and colorful diet that minimized processed foods, including “vegan” products like “impossible burger”, vegan cheeses, etc. and that optimized our natural detox channels (including digestion) and gut health.

But I was missing some vital: protein.
QUALITY protein.

Over the past 15 years, I have reworked my philosophy to better support women’s hormones (the majority of my clientele) and enhance their energy, cravings, metabolism and longevity through more consistent, structured and “balanced” meals (balance, meaning: there is an emphasis on quality protein coupled with leafy greens and low starch veggies).

My approach is mindful of my clientele’s busy lives and always tailored to their needs and goals– it is simple, approachable and sustainable.

I also do not promote a lot of kale, which is hilarious… because I used to be known in the Dallas area for my “massaged” kale salad. The reality is– kale is difficult to digest!

Okay, we’ve made it essentially to the end. One last question before you go. What will you regret not doing? 
Putting myself out there more. At my core, I am still quite self-conscious.

If you put me on a stage, podcast, or panel– I shine. But in everyday life, especially when it comes to sharing my private life on social media, I second guess how I will come across.

I wish I had the confidence to just go for it.
