Today we’d like to introduce you to Joon and Michelle Choe.
Joon and Michelle, let’s start with your story. We’d love to hear how you got started and how the journey has been so far.
Michelle and I wanted to make an impact in our communities. We wanted to do this by building a hospitality brand where we could make a positive impact on our team members and neighboring cities. On this project, we’re partnering with organizations such as Pivot Group, who provide opportunities for first-time offenders, single moms, and others who need a hand to wipe the slate clean and find rewarding opportunities.
Overall, has it been relatively smooth? If not, what were some of the struggles along the way?
Owning businesses comes with a host of challenges. Rewarding challenges, but harsh challenges nonetheless. Our obstacle of assembling the right team, finding our flagship location, and building our mission focused, operations manual, has been a challenge.

Public Taco serves chef-driven tacos with local and seasonal ingredients, complemented by an innovative cantina. Our guacamoles are smashed to order and tortillas are handcrafted on site. Our culinary mission is to provide delicious food, made fresh, at a great value.
