Hi Meredith, we’d love for you to start by introducing yourself.
I grew up surrounded by the smell of good food and the sound of hard work. My family poured everything they had into my dad’s restaurant in Marble Falls, Texas, where he worked for a decade. I remember helping bus tables and being a mini hostess as a child alongside my mom and Granny. I did not know it at the time, but those long days and late nights were teaching me more than just a work ethic. They were showing me how food can connect people. I have always wanted a place of my own, something that carried that same sense of pride and community.
My love for baking started early while baking with my mom. We baked my first batch of cinnamon rolls when I was a child. As an adult, baking became my safe space, my creative outlet, my stress relief, and my way of making people smile. In 2023 I baked a batch of cinnamon rolls for friends and family. Then a few more. Word started spreading, orders started rolling in, and suddenly my weekends were filled with dough, icing, and a lot of happy taste testers, especially my husband.
That is how Big Buns Bakery was born. I run it from my home kitchen in Melissa, Texas under Texas Cottage Law, making every single roll from scratch, big, gooey, and impossible to resist. I love dreaming up new flavors like Strawberrylicious, Camp Fire, Biscoff, and Lori’s Lemon. We bring Big Buns to farmer’s markets, wedding/baby showers, pregnancy announcements, and corporate events, spreading joy one cinnamon roll at a time.
For me, Big Buns is not just about cinnamon rolls. It is about creating joy, sharing comfort, and carrying on the pride I saw in my dad’s restaurant… with a little extra icing on top 😊
Would you say it’s been a smooth road, and if not what are some of the biggest challenges you’ve faced along the way?
Honestly, the biggest challenge has been space. Running Big Buns Bakery from my home kitchen means I am constantly playing a game of Tetris with mixing bowls, trays, and cooling racks. Early on I also had some electrical issues with my old oven and in a moment of pure irony my Camp Fire cinnamon rolls actually caught on fire. Thankfully no one was hurt but it definitely gave new meaning to the name. After that I invested in a double convection oven and it has been a total game changer. Now I can bake more buns at once and keep up with the growing demand without any surprise pyrotechnics.
We’ve been impressed with Big Buns Bakery , but for folks who might not be as familiar, what can you share with them about what you do and what sets you apart from others?
Big Buns Bakery is all about fresh, real ingredients and bold flavors. Our Strawberrylicious buns are filled with homemade strawberry compote, the Yee Haw bun has caramel cooked from scratch, Lori’s Lemon is made with fresh zested lemon and squeezed juice, and our blueberry and peach buns are packed with real fruit. We also offer gluten-free and vegan options, so there is something for everyone. Bold, real flavor, nothing fake.
Do you any memories from childhood that you can share with us?
One of my favorite childhood memories is picking peaches on the ranch in Fredericksburg, Texas, and eating them as I picked, alongside my Granny and my mom. She would turn those fresh peaches into her famous preserves, made completely from scratch, and I loved watching and helping her in the kitchen. Those moments sparked my love for baking and showed me the joy of creating something with your own hands.
