Hi Victor, thanks for joining us today. We’d love for you to start by introducing yourself.
Hello Voyage Dallas, thank you for considering me for this interview. I am currently the general manager of Taquero on Ross Avenue. I have been part of the company since its beginnings. What started as a small taqueria became one of the best authentic Mexican food restaurants here in Dallas. Fino Rodriguez, the creator and chef of Taquero, has been my main mentor in the world of gastronomy. He also taught me mixology in Mexican cocktails. I’m originally from Guanajuato, Mexico, but have been living in Dallas, Texas, for quite some time now. I love both countries the same.
I’m sure it wasn’t obstacle-free, but would you say the journey has been fairly smooth so far?
It hasn’t been easy to navigate the restaurant world, but I can definitely conclude that a good work team and perseverance are the two most important factors in achieving success. The biggest obstacle was definitely the 2020 pandemic. It challenged us to thrive despite uncertainty and fear.
Thanks – so, what else should our readers know about Taquero?
Taquero is known for its main star: Its gastronomy. Everything is homemade and made from scratch, from sauces, moles, dressings, chips, to chorizo, carnitas, and ceviche. Our ‘pastel de elote’ is unique. It’s like a Mexican version of cornbread, but with a moist texture and ‘rompope’ on top! Fino’s grandmother taught him how to make it. Most of our cocktails contain fresh fruits and juices, from blueberries, raspberries, and strawberries to mint, basil, and hibiscus. The fusion between fresh ingredients and mezcal, tequila, or any other choice of liquor, make the perfect cocktail for anybody to enjoy at any given time of the day. We also use cucumber, jalapeño, avocado, and prickly pear in our cocktails.
Who else deserves credit in your story?
Fino Rodriguez has definitely been my mentor. He grew up in a family of entrepreneurs and has taught me everything I know about the restaurant industry. He is a well-known chef here in Dallas and back in his hometown: Matehuala, San Luis Potosí, Mexico.
