Hi Nidhi, please kick things off for us with an introduction to yourself and your story.
Growing up in New York surrounded by Indian, Hispanic, and Italian communities, food was always at the center of everything. But being a true New Yorker, my deepest love was always the bagel. That love followed me through every chapter of my life — from New York to Canada, then North Carolina, and finally Texas — and if anything, the distance only made the craving stronger.
In 2025, after being laid off, my husband encouraged me to stop dreaming and start doing. I launched Heritage Bakehouse starting with cakes and cookies, crafts I’d been perfecting since I was a teenager. But something kept pulling me back to those bagels. I decided to take on the challenge of recreating the real New York bagel — that perfect crisp exterior with a chewy, pillowy inside — and after countless rounds of testing and tweaking, I truly believe I nailed it.
The best part? Watching people taste them for the first time. Neighbors, customers, and even our local fire department, who I love to surprise with a few dozen every month — their reactions remind me exactly why I started.
We all face challenges, but looking back would you describe it as a relatively smooth road?
Smooth? I’m not sure any worthwhile path ever is. I’ve come to see every hurdle and challenge as an opportunity to grow rather than a reason to stop. From countless recipe trials to navigating negative feedback, accommodating dietary restrictions, and simply building something from the ground up — every obstacle has shaped Heritage Bakehouse into what it is today.
But honestly, the hardest part wasn’t any one challenge — it was the mental leap. Walking away from a straight, predictable path of school, college, and a corporate career to bet on yourself is no small thing. That shift in mindset takes real courage, and some days it takes everything you have just to keep going.
What I’ve learned is that starting is the hardest step. Once you push past that fear and take the leap, the doors that open are endless. Every struggle since has only reinforced that this was exactly the right path for me.

Heritage Bakehouse – TX is a home bakery based in Melissa, TX operating under the Texas Cottage Food Law. It was born from a deep love of baking and a desire to bring made-from-scratch goods to my home and community. Every items that leaves my kitchen is made with care, quality ingredients and real attention to detail – because I believe food made with intention tastes different.
I create custom cakes, cupcakes, breads, bagels, muffins for individuals, families and local businesses. Whether its a one-of-a-kind celebration cake or a weekly bread order, everything is handcrafted in small batches to order.
I specialize in specialty flavor cakes – think unique flavors with beautifully styled themes cakes and buttercream that both artistic and delicious. I’m also proud of my artisan bagels which have developed a local following for their texture and variety – from classic everything to jalapeno cheddar, and seasonal special like Easter rainbow swirls.
What sets me apart is everything is made to order. Nothing is prepared in advance waiting on a shelf. Second, I bring a level of flavor thoughtfulness that goes beyond vanilla and chocolate. I love incorporating cultural flavors and seasonal ingredients into my word. Third, personal connect matters to me and as a cottage food baker, my customers know their food is made by hand in a real home kitchen.
I’m most proud of the identity Heritage Bakehouse has built – the word ‘heritage’ is intentional. It speaks to tradition and baking passed down through generations, the pride in handmade craft and sense of belonging that good food creates. The brand feels like me and I think customers feel that authenticity when they order.
Who else deserves credit in your story?
So many people deserve credit for where I am today, but it starts at home.
My father, Pranav Patel, showed me early on that there’s no obligation to follow the path everyone else expects of you. He embraced food and cooking as a joyful part of our family life growing up, and instilled in us a belief that there’s no right or wrong when it comes to food — only the undeniable truth that it brings people together. That philosophy is at the heart of everything I do at Heritage Bakehouse.
My mother, Sangita Patel, taught me the quiet power of sacrifice. She showed me that giving things up in the short term isn’t a loss — it’s an investment that pays off in ways you can’t always see coming. Her example gave me the patience and resilience to trust the process.
And my husband, Shivam Patel — he was the push I didn’t know I needed. When I was laid off and standing at a crossroads, he believed in me before I fully believed in myself. Without his encouragement and unwavering support, Heritage Bakehouse simply wouldn’t exist.
I carry all three of them with me in everything I bake.
