Hi Pamela, so excited to have you with us today. What can you tell us about your story?
After 20 plus years of being one of the premier off premise caterers in the Philadelphia and Princeton, NJ markets some very powerful and influential clients knew we were looking for a venue and asked us to join them in Texas as their caterer. One was a Senior Executive at M.D. Anderson, and one was the new, head football coach at a Big 12 University. We found a beautiful 32-acre garden property in the lush East Texas countryside which we knew was perfect for our next great adventure. We purchased our property in early 2016 and after Covid decided it was time for a more personal touch. We upgraded and renovated the entire property and transformed it into the home of Texas Luxury Weddings. Opulent minded brides love us because we are exactly what they are looking for to make their wedding day Pinterest worthy.
We are now recognized as one of the premiere private dining destinations in the state offering our discerning and fun-loving clientele an unforgettable culinary experience immersed in our gardens. That is why we created Texas Foodie Adventures and added overnight accommodations. People say we e truly a hidden gem. We are all about the guest experience and ours is second to none. We knew our high-end hospitality would be well received in the Lone Star State, and we were right. From stylish Texas weddings to long overdue family reunions, to corporate events and elegant dinner parties we’re all about bringing people together and helping our Texas foodie hosts celebrate their special big day or big event.
We all face challenges, but looking back would you describe it as a relatively smooth road?
It’s been an enlightening journey helping Texas hosts realize what is possible when you work with a top tier service provider like Hummingbird Hollow. They love that all of our well- crafted menus are expertly prepared and beautifully presented. Our level of hospitality is new to certain parts of Texas since there has never been anything like us in this region. Our hosts now realize it is possible to offer their guests a seamless event. Great food makes for a great event, and nothing less will do, especially on no do-over days. The biggest challenge we found was properly promoting our services to the right audiences. We took on the challenge of raising the bar on elegant entertaining. It is not easy when people only know what they know but education and word of mouth have produced spectacular results. It’s still a learning process every day but the buzz on the street has never been stronger. We love making our client’s shine when the spotlight is the brightest.

Hummingbird Hollow is a stunningly beautiful 32 acre garden property with four distinctly different ceremony sites, a climate-controlled reception venue with seating for 300 guests, a 2,500 sq foot party deck, outdoor living room, bridal and groom’s cottages to get ready, a luxurious Honeymoon cottage with an inviting purple clawfoot bathtub, overnight accommodations all set in the exclusive East Texas countryside on the protected Pine Forest Trail. What makes us deliciously different is our scintillating indoor and outdoor dining experiences. We specialize in listening to our clients to create custom menus or awesome packages for their weddings and events that reflect who they are and what they want.
As a highly acclaimed Executive Chef. I make sure our food quality and guest experience is always a top priority. Over the years I have catered for several U.S. Presidents, Supreme Court Justices, College Presidents, celebrities, titans of industry, savvy foodies, world travelers, Ivy League Universities and the most beautiful brides anywhere.
We offer specialty menus and always take dietary considerations into account, so each guest feels included, not excluded. Our food is presented in multipole ways from buffet to seated served to stations menu to family style and small plates We work custom with many of our clients to make their events all they want it to be. Can you talk to us about how you think about risk?
Some people are change-averse. Others embrace it. In that way, risk is like art, it’s completely subjective. What one person sees as an opportunity, another sees as risky. My dad always said I had a whole lot of living to do. He was right. I believe not taking a risk is a risk. In today’s world, inaction can be the biggest gamble of all and there’s no perfect time to take a risk.
I was the Executive Chef for the Museum of Archaeology and Anthropology in Philadelphia when 9/11 happened. A full calendar was literally wiped out overnight and I was suddenly unemployed. After taking our kids to pre-school one day I was approached to do dinner for 15, which quickly led to an anniversary party, then a reception for 750. Suddenly, our home became a catering commissary. We needed a larger space to work out of so we rented a church kitchen then eventually fit out our own commissary starting with 2,500 sq feet and expanding to 10,000 sq feet complete with production kitchen, pastry department, executive offices, tasting salon, warehouse, 4 walk ins, two loading docks, ware washing and in house laundry. Was it risky taking that first party not knowing where it would lead? Absolutely! Was it riskier not to? Absolutely! We worked hard and bet on ourselves, which is what one does when faced with decisions, a mortgage and two young children. The choice was obvious.
