Today we’d like to introduce you to Eric MacIntyre.
Eric, can you briefly walk us through your story – how you started and how you got to where you are today.
I started bar-tending in college and have been working in the industry ever since. I started with the company over 3 years ago at one of our other concepts, Taverna Rossa in Plano. After a few months, I came over to Cadillac and I’ve been the GM here ever since.
Great, so let’s dig a little deeper into the story – has it been an easy path overall and if not, what were the challenges you’ve had to overcome?
It’s been as smooth as possible. I believe in hard work and treating your guests the way you’d like to be treated, serving quality products, and not ever letting people leave upset or unsatisfied. Of course, like anything there have been some hiccups along the way, but I find that if you hold to these basic tenants and you treat your guests and your staff with respect you can usually find a common ground even in those less than ideal situations.
Cadillac Pizza Pub – what should we know? What do you guys do best? What sets you apart from the competition?
Cadillac Pizza Pub is really a dual threat. Throughout the day, we are a great family restaurant where you can also go to relax and have a great beverage or two. At night when our Live Music gets going naturally, we turn into more of a bar atmosphere where you can still get excellent food. As much as possible we adhere to both the go local and the go Texan movements. All of our meats and cheeses are locally sourced when possible and all of our drafts are from Texas breweries with exception of our IPA rotator. Our service and our atmosphere definitely help set us apart. From our extremely professional and very pleasant staff, to our bar top where everyone knows each other’s names, you feel comfortable here and can relax and just have a good time and a quality meal. One of the other things that sets us apart is of course our Pizza. We’ve been voted McKinney’s best for several years and it’s something we take very seriously and will always strive to achieve. Lastly our fantastic live music, we have some of Dallas’ most talented and fun players on a routine basis.
What moment in your career do you look back most fondly on?
Last year for Oktoberfest, which is a huge deal in Downtown McKinney, we finished our patio the night before the festival began. We still were able to hit the ground running and didn’t miss a beat. I was extremely proud of Cadillac, the kitchen crew, the hostesses, and the floor staff. We all handled it great and the patio has been a HUGE addition for us ever since.
