Today we’d like to introduce you to Levi Knight.
Levi, let’s start with your story. We’d love to hear how you got started and how the journey has been so far.
I had a dream of opening up my own coffee shop, and I helped open up Bookclub Cafe down in Rockwall, where I gained product knowledge, learned about ingredient quality, and the in’s and out’s of business management. During my time there, I focused on learning about the craftsmanship of coffee making. After that, I got a job as a personal trainer, which had been a longtime dream of mine, but the more time I spent away from the coffee shop, the more I missed the atmosphere and culture of coffee. I had a lot of time during the mornings when I wasn’t training, and so I applied and got hired at another coffee shop. There, I became good friends with my coworker Alex, who had previously worked as a barber in Deep Ellum at High & Tight, which was located next to an old fashioned candy store, Rocketfizz.
While Alex was on his breaks from the barbershop, he would chat with the owners of Rocketfizz- Jacob and Danny. Alex and I worked together at the coffee shop for a year when Alex ran into Jacob from Rocketfizz, and as they caught up, Jacob mentioned that he wanted to start a coffee shop, but that he lacked the coffee knowledge to execute it, and so he asked Alex to help run it as a part-owner. Alex agreed to the position only if he could bring me in as a part-owner as well. I met up with Jacob, and after asking a few questions, I knew this opportunity was the real deal! I accepted the position and knew my dream of opening up my own shop was unfolding before my eyes. Jacob and Danny brought in the ice cream side of the shop, and Alex and I brought in the coffee side. Together, Cream & Sugar was born!
Great, so let’s dig a little deeper into the story – has it been an easy path overall and if not, what were the challenges you’ve had to overcome?
Although it has been a relatively smooth and easy road, it has still had its ups and downs. The toughest part on my end has been being a young businessman who is learning the ropes of dealing with vendors and managing employees.
Alright – so let’s talk business. Tell us about Cream & Sugar – what should we know?
We provide delicious, locally roasted craft coffee, locally sourced honey, and local whole milk, as well as the creamiest, local hand-made ice cream, with both vegan ice cream and coffee options.
Our high-quality product is not the only thing that sets us apart- we also maintain a clean, welcoming, and friendly environment that with the ample natural lighting, is perfect for work productivity as well as for coffee dates with friends.
We pride ourselves in sourcing our products locally and keeping a high standard of cleanliness and excellent customer service. Often, we find regular customers becoming good friends with our fun and engaging staff.
Coffee connoisseurs frequently rave about us as a rare, long-awaited Dallas-caliber coffee shop in the Northern Dallas metroplex.
Finally, we are conveniently located just off of the 75 freeway in Fairview and are next door to a splash pad, which pairs perfectly with our ice cream during the hot Texan summers, and a stage next door which hosts lots of movies, events, and free local concerts for family activities.
